Ingredients:

  • 2 large boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 3 tsp Italian seasonings
  • ½ cup all-purpose flour
  • 4 tbsp shredded Parmesan cheese
  • 3-4 tbsp olive oil
  • 3 tbsp unsalted butter
  • 10 cloves garlic
  • 3 tbsp flour
  • 2 ½ cups chicken broth
  • 1 beef bouillon cube or 1 tsp better than bouillon
  • 1 tsp low-sodium soy sauce (or Worcestershire sauce)
  • 1 tsp onion powder
  • ½ tsp mustard powder
  • ½ tsp dried thyme
  • ½ cup heavy cream
  • ½ cup Parmesan cheese (optional)
  • Fresh parsley for garnish

Instructions:

Preparation:

  • Mix chicken broth, bouillon, soy sauce, onion powder, mustard powder, and thyme. Set aside.
  • Combine flour and Parmesan cheese on a plate. Prepare other ingredients before starting.

Chicken Prep and Searing:

  • Slice chicken into 2-3 thinner pieces. Place in a bag or between wrap, pound to ½ inch thickness, and pat dry.
  • Season with Italian seasoning, salt, and pepper. Coat both sides in flour mixture, shaking off excess.
  • Heat olive oil in a large skillet over medium-high heat. Sear chicken in batches for 4-5 minutes each side. Set aside, leaving browned bits in the pan.

Making the Sauce:

  • Melt butter in the skillet over medium/medium-low heat. Use a spatula to scrape the bottom.
  • Add garlic cloves, and caramelize for 6-7 minutes.
  • Add flour, and whisk for 1-2 minutes until it browns.
  • Gradually pour in the chicken broth mixture, stirring continuously.
  • Stir in cream, bring to a boil, then reduce heat. Add Parmesan cheese.
  • Return the chicken to the pan with any juices. Spoon sauce over. Cover and cook for 5 minutes to thicken.
  • Garnish with parsley and serve with mashed potatoes and roasted green beans. Enjoy!
